Eid ul Adha in Karachi means one thing after the prayers and distribution — the BBQ starts. Whether it's the whole family gathered around the sigri in the evening, or the smell of charcoal and masala drifting from every terrace in the neighbourhood, Eid BBQ is a Karachi tradition as strong as the Qurbani itself.

Shoulder cubes marinated in raw papaya, yoghurt, red chilli, and garam masala. High heat, charred edges, served with raita and naan.

Mince mixed with onions, green chilli, coriander, cumin, and egg. Skewered, grilled over coal, finished with chaat masala and lemon.
Rack chops marinated overnight in kachri/papaya, spices, and mustard oil. Grilled on coals until well-charred outside, pink inside.
Whole leg scored and stuffed with garlic, marinated 24 hours, slow-cooked on covered grill for fall-off-the-bone result. The showstopper.
Thinly sliced beef sirloin, minimal marinade (ginger-garlic, lemon, oil), seared on an iron griddle or tawa over direct flame. Fast and incredible.
Slow-cooked mince with chana dal and spices, shaped into patties, grilled on the BBQ for a slightly smoky twist on this classic.
Beef ribs rubbed with desi spices, wrapped in foil on the sigri for 2 hours, then unwrapped and charred over coals. Melt-in-your-mouth texture.

Tips from Karachi's best home grillers — things that make a real difference on the plate.
Qurbani beef is fresh and relatively tough — raw papaya paste (kachi papita) contains papain enzymes that genuinely tenderise the meat in 6–8 hours. No other tenderiser works as well. Green papaya, blended. Even 2 tbsp per 500g changes everything.
When cutting your cow share meat into boti cubes, always cut across the muscle fibres (against the grain). This shortens the fibres and makes every bite significantly more tender, regardless of which cut you're using.
If you're doing Eid BBQ, use a sigri with proper charcoal (not the quick-light kind). The Maillard reaction — that deep brown crust with smoky aroma — only happens at the high, dry heat that charcoal produces. Gas grills are convenient; charcoal is Karachi BBQ.
Before grilling, give your marinated meat a 5-minute dhuan: put a small piece of coal in a metal bowl, place it in the marinating container, pour a teaspoon of oil on the hot coal, cover immediately for 5 minutes. This infuses a restaurant-level smoky depth.
Take your marinated meat out of the refrigerator 30–45 minutes before grilling. Cold meat on a hot grill creates steam — not the crust you want. Room-temperature meat grills evenly and gets a better sear.
Leave space between pieces. Crowded grills steam the meat instead of searing it — you lose the char and the flavour. Grill in batches if needed. Patience on the grill = much better food on the plate.
Bakra gosht is more tender and cooks faster than cow share beef. Mutton chops on high heat: 4–5 minutes per side. Beef boti on high heat: 6–8 minutes per side. Don't apply beef timing to mutton — it will dry out.
In the last 2 minutes of grilling, brush your boti or chops with a small amount of butter or ghee. It adds gloss, richness, and a beautiful aroma. This is what separates home BBQ from restaurant quality.
Let grilled meat rest for 5 minutes before serving. This allows the juices to redistribute through the meat instead of running out when cut. Cutting immediately wastes all those juices on the plate instead of in your mouth.
